  • 1 cup Italian seasoned bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1 tablespoon dried basil
  • 1/2 cup butter, melted

Step 1

Preheat oven to 400 degrees F (200 degrees C).

Cut chicken breasts into 1 1/2-inch sized pieces. In a medium bowl, mix together the bread crumbs, cheese, salt, thyme and basil. Mix well. Put melted butter in a bowl or dish for dipping.

Dip chicken pieces into the melted butter first, then coat with the breadcrumb mixture. Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.

Very helpful tips/suggestions from reviews of this recipe available on website. *Tips from reviewers: Place chicken on a cooling rack on top of a foil-lined cookie sheet (for easier clean-up). This allows the bottom of the chicken to crisp up as well. If you want to save calories, use buttermilk instead of the butter. This tenderizes the chicken as well and the coating sticks to it. Then spritz with a light spray of oil and bake. Turn approx. 3/4 of the way through for even browning. This recipe also works well with Panko or cornflake crumbs. **Several reviewers suggested reducing the salt to 1/2 teaspoon or omitting entirely.
