Caribbean chicken 1 Picture


  • 4 chopped scallions
  • 1 chopped bell pepper
  • 6 T minced garlic
  • 3 " fresh ginger
  • 2 T lime juice
  • 2 T soy sauce
  • 2 T brown sugar
  • 1 T pumpkin pie spice
  • 1 t thyme
  • 1 cut up chicken or pkg chicken pieces
  • salt to taste
  • oil for grate or broiler pan

Step 1

In food processer combine scallions, peppers, garlic, ginger, lime juice, soy sauce, sugar, pumpkin spice, and thyme. Puree into a thick paste and coat chicken with mixture. Cover coated chicken and allow to marinate for 12-24 hours. Oil broiler pan or grill grate and cook chicken until no longer pink. Baste with remaining paste as chicken cooks.
