Zucchini "Crab" Cakes

Ingredients
- 2 cups grated zucchini
- 2 eggs, beaten (1/2 cup egg substitute can be used)
- 1 cup seasoned bread crumbs
- 2 tbsp mayonnaise or salad dressing (fat free can be substituted)
- 2 tsp Old Bay seasoning
- 3 tbsp olive oil

Step 1
Mix everything together. Blend well. Shape into patties. Fry in medium oil about 4 inches each side. Serve with cocktail sauce or tartar sauce if desired.
