Cauliflower Potato Mash

Hide a serving of cauliflower in your next batch of mashed potatoes with this easy recipe. This recipe uses a one-to-one amount of cauliflower to potatoes, but you can use whatever amount of each that you like. Place the cooked vegetables in a food processor or blender (or use an immersion blender) for a smoother texture, but I like a more rough texture you get from mashing the vegetables by hand.

Ingredients

  • 3 russet potatoes, peeled, cut in half lengthwise
  • 1 head cauliflower, small florets
  • 1/2 stick butter, I used 1/4
  • 1/2 cup milk, or if made ahead 1/2 block of cream cheese
  • 1/4 tsp white pepper, salt to taste

Preparation

Step 1

Cook potatoes in boiling salted water, strain, set aside. Cook cauliflower in butter, covered, stirring often till soft. Continue cooking uncovered until liquid is gone. Mash fine or course. Add in potatoes and mash. If serving immediately, add milk, pepper and salt. Can also add cooked garlic and/or cheese. Serves 6 or 8.
