Ingredients

  • 1/4 Cup Olive Oil
  • 3 Cloves minced garlic (don’t use the jarred stuff)
  • 2 Tablespoons dry rub (Recipe below)
  • 2 Pounds Large de-veined shrimp.
  • Sea Salt
  • Small handful chopped fresh cilantro
  • 1 Lime – divided
  • Dry Rub Recipe
  • 3 Tablespoons each of fresh ground pepper – (use a spice/coffee grinder and save your wrists); Salt, Dark Brown Sugar, Paprika,
  • 1/2 Teaspoon chipolte pepper powder
  • 1/2 Tablespoon each of cayenne pepper, garlic powder, onion powder
  • 1/4 Teaspoon cinnamon

Preparation

Step 1

Combine thoroughly in a small bowl. Makes 3/4 Cup. Store in a cool dark place. Great for Seafood and Chicken.

Heat oven to 375. In a small saucepan, heat oil, 2 tablespoons garlic and dry rub over low heat for about 3 minutes until oil is hot but not boiling. Set aside. In a large baking pan, add shrimp, rmainder of garlic, then pour garlic oil over shrimp stirring to coat. Season shrimp with salt and bake for about 12 minutes or until shrimp have just turned pink. Remove from oven , add cilantro and the juice of half the lime. Toss to coat and transfer to a serving bowl. Garnish with lime wedges and serve immediately with crusty bread (or on a salad).  Serves 8
