Ingredients
- 6 oz. uncooked soba noodles, broken in half
- 1 pkg. coleslaw mix
- 3/4 cup thinly sliced green onions, divided
- 1/2 pound coarsely chopped rotisserie chicken
- 3 Tbsp. soy sauce
- 3 Tbsp. rice vinegar
- 2 1/2 Tbsp. creamy peanut butter
- 1 Tbsp. oil
- 2 tea. Thai chile paste with garlic

Preparation
Step 1
Cook noodles according to package directions, omitting salt and fat. Drain, rinse with cold water.
Combine noodles, cabbage mix, 1/2 cup green onions, and chicken in a large bowl.
Combine soy sauce and next 4 ingredients in a small bowl, stir with a whisk until blended. Add soy sauce mixture to noodle mixture, tossing gently to coat.
Sprinkle with 1/4 cup green onions.
