Ingredients
- Glaze:
- 2 Tbsp butter or margarine
- 2 small onions, chopped
- 2 cloves garlic, minced
- 3 pkg frozen spinach, thawed and squeezed dry
- 2 pkg frozen puff pastry, thawed
- 12 oz Black Forest ham, sliced
- 1 lb mozzarella cheese, shredded
- 8 eggs, beaten
- 1 egg beaten

Step 1
In skillet, melt butter over medium heat, cook red peppers, onions & garlic for about 12 minutes or until all liquid has evaporated. Remove from heat, stir in spinach.
Roll each piece of pastry 1/8 inch thickness, with 1 piece, line a 10 inch springform pan, leaving excess draped over rim of pan. Spread half of the ham slices in bottom of pan, sprinkle on half of the cheese, top with half of the spinach onion mixture and pour on half of the eggs; layers. Cover with remaining pastry; trim off excess and pinch pastry layers together around rim. Cut steam vents on top.
Glaze: Brush top with egg. Place pan on rimmed baking sheet, bake in centre of 400F oven for 15 minutes, reduce heat to 350F, bake for 45 to 60 minutes or until golden and knife inserted in centre is hot when pulled out. Let cool for 15 minutes. Remove pan side, cut into 10 wedges and serve.
