Maple Glazed Turkey w/Mixed Herb Gravy

I also roast turkey parts (wings, thighs, legs-a few) a day before if we are deep frying the turkey as I don't get drippings, as not a roast turkey.

Ingredients
- Gravy:
- 1/2 c. flour
- 6 Tbsp. butter, cut into pieces
- 5 c. canned low salt chicken broth
- 3 Tbsp. mixed fresh herbs, chopped (savory, thyme, sage, parsley)
- Turkey:
- 1 - 14 -15 lb.
- 2 1/2 Tbsp. butter, melted
- 3 1/2 c. canned low salt chicken broth
- 1 Tbsp. pure maple syrup
- 1/8 tsp. ground ginger
- 3 Tbsp. mixed fresh herbs (parsley, sage, savory and/or thyme)
- Favorite stuffing

Step 1
For gravy:
Toast flour in heavy large skillet over med-high heat until pale golden (about the color of peanuts), stirring constantly, about 7 minutes. Add butter and whisk until butter melts and mixture is smooth (will become very dark). Gradually whisk in broth and bring to boil over medium heat, whisking frequently. Reduce heat, simmer until gravy is reduced to 2 1/2 cups, about 30 minutes. Can be made 8 hours ahead; cover and chill. Add herbs just before serving.
For Turkey:
Preheat oven to 325. Rinse turkey inside and out and discard any pieces of fat in the main cavity. Pat turkey dry with paper towels. Fill neck cavity loosely with stuffing, fold skin over and secure. Fill main cavity, ditto. Place turkey on a rack in large roasting pan. Tie turkey legs together to hold shape. Tuck wings under turkey, and brush with 1 1/2 Tbsp. melted butter. Sprinkle turkey with salt and pepper. Pour 1/2 c. broth in roasting pan.
Roast turkey 3 hours, basting with pan juices and adding 1/2 c. broth to pan every 30 minutes. Mix maple syrup, ginger and 1 Tbsp. melted butter; Brush mix over turkey. Continue to roast turkey until thermometer inserted into innermost prt of thigh registers 180, about 15 minutes longer.
Transfer to platter and tent with foil for 30 minutes.
Scrape pan juices from roasting pan into 2 c. measuring c. Spoon off and discard fat from surface. Add juices to gravy. Add herbs and bring to simmer. Season w/salt & pepper.
