Ingredients
- 2 c diced onion
- 1/2 c orange juice
- 1/2 c beef broth
- 1 T grated lemon rind
- 2 T honey
- 1 T lemon juice
- 2 t minced garlic
- 2 t grated ginger
- 1 t coriander
- 1/2 t cumin
- 1/4 t black pepper
- 1 lb boneless leg of lamb, cubed
- 2 cinnamon sticks
- 6 oz dried apricots, halved

Preparation
Step 1
Combine all ingredients in a crock pot. Cook on high 1 hour, reduce heat to low and cook 6 hours. Serve with couscous.
