Ingredients

  • 2 Tbsp. minced fresh basil, or 1 tsp. dried basil
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. Balsamic Vinegar
  • 2 Garlic cloves-crushed, or ½ teas. Garlic powder
  • 2 Medium Zucchini, chunked
  • 1 Medium Red Pepper, cut in 1 inch slices
  • 2 Yellow crooked neck squash, chunked
  • 1 Large Red Onion, cut in wedges
  • 1 8 oz. package mushrooms, halved

Preparation

Step 1

Preheat oven to 425 degrees
Combine first 4 ingredients in large bowl. Stir well
Add Vegetables. Toss to coat
Arrange vegetables in a single layer in a shallow roasting pan or on a cookie sheet.
Bake at 425 degrees for 40-45 minutes, or until slightly browned
