SHRIMP WITH CATALAN SAUCE

Ingredients
- Catalan sauce:
- 1 large tomato
- 2 teaspoons chopped garlic
- 1/4 cup slivered almonds, toasted
- 2 tablespoons toasted pine nuts
- 1/4 cup fresh breadcrumbs, toasted
- 1/4 teaspoon red chili flakes
- 1/2 teaspoon hot smoked Spanish paprika
- 2 tablespoons sherry vinegar
- 3 tablespoons olive oil
- 3 tablespoons chopped parsley
- Salt to taste
- Shrimp:
- 2 tablespoons olive oil
- 1/2 cup chopped onions
- l pound large shrimp, shelled and deveined
- Freshly ground pepper to taste

Preparation
Step 1
Place tomato, garlic, almonds, pine nuts, breadcrumbs, chili, paprika, sherry vinegar and oil in a mini-chop or food processor and process until it forms a paste. Add parsley and pulse until combined. Season with salt. Reserve.
Heat oil in a large skillet over medium-high heat. Add onions and saute for 3 minutes or until onions just begin to colour. Season shrimp with pepper, add to skillet and saute for 1 to 2 minutes or until pink and just beginning to curl. Remove from heat and toss with sauce.
