  • 4 pieces of chicken breath
  • flour, salt and pepper
  • 3/4 cup chicken broth
  • 1/2 cup of white wine
  • 2 tbsp of cold butter

Preparation

Step 1

Start with thin uniform pieces of chicken. Make your own chicken cutlets using a sharp chef’s knife and cutting parallel to the board. Moisture inhibits a good sear. Blot food dry with paper towels. Season food with salt and pepper before cooking. Heat oil until shimmering. Dredge food in flour and knock off any excess. Leave food alone as it cooks. Use tongs to flip food. When done Let food rest covering with foil paper.

Build sauce in pan once chicken has been removed. Add like 1/4 cup of shallots or onion very fine chopped. Deglaze pan with liquid. Add chicken broth and white wine. You can add vermouth or brandy instead of wine, and beef or vegetable broth instead of the chicken broth.

Add herbs and other finishing ingredients like thyme, lemon juice and cold butter. Pour the sauce over the chicken
