Ingredients

  • 1 cup olive oil
  • 1 cup red wine vinegar (or experiment with a combo of other vinegars or lemon juice)
  • 2 1/2 tsp. garlic powder
  • 2 tsp. onion powder or dried minced onion
  • 2 1/2 tsp. dried oregano
  • 2 1/2 tsp. dried basil
  • 2 tsp. pepper
  • 2 tsp. salt
  • 2 tsp. dried or prepared mustard (take your pick)

It's kind of funny, I went to Costco awhile back to get some balsamic vinegar to combine with some olive oil for a salad dressing. They Costco store I went to that day didn't have the balsamic vinegar that I had seen at the other Costco we frequent, but they did have a large bottle or red wine vinegar and white wine vinegar packaged together for only $3-something. So, I bought them, and soon after, came upon

that calls for red wine vinegar. Perfect! I like that it makes a good-size amount, it contains no added sugar, and it really is a flexible/tweak-able recipe as Sarah says. It is very potent!

We make this often since we frequently add salads to meals.

Combine ingredients in a jar. Store tightly covered at room temperature or in the refrigerator (will need to let the olive oil come to room temp. before serving.) Shake well before pouring. Enjoy!

I grew up with an Italian uncle who made all our Italian dressings. (One part apple cider vinegar to two parts olive oil....plus seasonings: salt, pepper, garlic to taste, oregano, basil, (NO SUGAR!). It's great with tossed salad......very simple, easy to make and VERY Italian.

Odd. I assumed dried. It was great. I think if I added tiny parmesan shavings, it would be like Greek herb dressing (which I will never pay $$$ for again). I think blue cheese or feta crumbles would also be wonderful.

If you add cheese, it will not be paleo, if that is what you are wondering. Some cheese added can still be considered primal. I agree it would be delicious that way!

This dressing is amazing! And makes a perfect chicken marinade!!

I was a little skeptical with so much oregano, I am not much of a fan of it. But I must say this dressing is awesome. Two thumbs up. When I make another batch I am going to go a little less on the oregano. Thank you so much for this recipe.

I'm glad you can make it work for you. I love oregano, but the beauty of this recipe is that it is pretty forgiving - once I accidentally put parsley in and it was great. If you find any new variations we should try, let me know!

Love it!! My 16 year old picky eater loved it, so that say a lot believe me. He keeps asking me where I bought it. Guess next time I will make it in front of him =) Thanks for sharing
