Overnight Cinnamon Coffee Cake

This is an old family recipe that is a real favorite! Hope you enjoy it as much as we do. Especially love this in Autumn with the Cinnamon Aroma in the Home. This is a very moist and easy coffee cake.

- 2/3 cup butter or margarine
- 1/2 cup packed brown sugar
- 1 cup granulated sugar
- 2 eggs, beaten
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup buttermilk
- 1/2 cup packed brown sugar
- 1/2 cup chopped nuts
- 1/2 teaspoon cinnamon

Step 1
1. Cream together oleo, 1/2 Cup brown sugar and 1 cup granulated sugar. Add the beaten eggs and mix well.
1. Sift together all dry ingredients. Add to creamed mixture alternately with the buttermilk.
3. Pour into greased and floured 9 x 13-inch pan. Sprinkle topping over the batter. Cover with foil and refrigerate overnight.
4. Remove foil and bake at 350° for 35 minutes or until cake tests done.

Can I give this one 10 stars?? This is an excellent, delicious coffee cake. It was very easy to throw together the ingredients and I love that this is a "make tonight, bake tomorrow for breakfast" recipe - making a great choice for serving to overnight guests. The taste is excellent, the color of the cake is rich brown on top, with a moist flaky interior. It is truly a wonderful coffee cake. The only change I made was to use real butter in place of oleo. Thank you for sharing to family gem!
This is a recipe that every home cook should have in their recipes. The only objection anyone might have to it, is nuts..and even that since you make it in a 13x9 pan, you could just put nuts on half. It's a recipe you can make the night before or cook right away. I had all the ingredients on hand and most home cooks would. You could experiment with it over time, making it your own. Doubling the topping or swirling through the cake or trying some apples or blueberries. This is one of those recipes perfect for saying "I care"...to throw together when you hear of a family in crisis or sitting with a friend and cup of coffee and tears or laughter. It's a Family Recipe that is just...well...great.
This coffee cake is excellent. Good moisture and good flavor. It is very cinnamon-y. I used milk because I did not have buttermilk on hand and it still turned out good.
Fabulous! This is the perfect recipe for sharing with others. I like to make this in a disposable foil pan with lid, attaching baking time to the top on a pretty notecard. I deliver this unbaked so that the recipient can have it fresh and hot when they are ready for it. It's always much appreciated. This is also great for family mornings, or for work/church functions. SO light and fluffy; so very VERY! good. It's my boyfriend's bday and he looooves coffee cake and, this being the first time I made it, I couldn't be happier that it turned out so well. I'm a novice at baking, these were the best results I have had so far with any baked goods. Like several other reviewers, I used A) regular (unsalted) butter instead of oleo and B) 1 tbsp of vinegar in the cup of milk (and let it sit 10 mins) in place of buttermilk, and C) made it the morning of instead of the night before (put in freezer for just a few mins to stiffen up the batter). Also, like some, omitted nuts (don't like em!) I don't own a sifter, so I slowly bit by bit shook the flour through this small handheld strainer that I own, which worked fine to sift and I think made all the difference in fluffiness! If you don't own a hand-held mixer/beater thing I bet that helps a lot with the creaming butter/sugar part--my arm was killing me! Think I will invest in one for the future.
Delicious!!! This cake is so simple to prepare and tastes wonderful. I baked it immediately after preparing the batter and didn't refrigerate it overnight, it turned out fine. My kids unanimously rate this cake five stars. This one's a keeper.
YUM! I woke up this morning with a hankering for coffee cake. I figured I'd try doing this recipe without letting sit overnight (also skipped nuts and used butter instead of Oleo) - it is heavenly! Light and moist - great cinnamon flavor all the way through. A definite keeper!
Fantastic! I used butter instead of margarine, and omitted the pecans. I used a pan that was 9x13 at the top, but 8x12 at the bottom, it took 45 minutes to cook. I can't wait for the opportunity to make this for company - I love the whole idea of getting it ready and pop it in the refrigerator for later. Yum, yum, yum!!!
This was delicious! I made it for Christmas morning and everyone loved it! It is so moist! I added an extra tsp of cinnamon to batter and made extra topping to mix into it as well. Thanks!
I made this today. I used butter instead of margarine and didn't use the nuts. I baked it right away and it was excellent tasting and easy to make. The house smelled wonderful while it was in the oven. Everyone loved it. It took 30 minutes in my oven. thanks:)
This is a nice cake that is very simple to make .. I froze most of it and my husband enjoyed it for breakfast for days afterwards .. thanks
This coffee cake is so easy to make. A must have recipe for company, prepair in evening and have that fresh baked smell for your guest to wake up to. Would be something nice to take to work and show off your culinary skills to teammates.
I prepared the recipe as is except I used half butter and half margarine (I like cooking with real butter). I didn't have buttermilk on hand, so I used 1 Tbs. of vinegar per one cup of milk and it worked perfectly! I doubled this recipe and used a 10x15 pan. I prepared it a day earlier and refrigerated overnight for a morning community yard sale. Baked for about 40-45 minutes and it came out perfectly! Tender crumb and great crunchy topping...it was a hit! The customers raved! This recipe is a keeper!
My family loves this coffee cake. They have asked me several times to make it! It always disappears quickly, too. It's very easy to make and delicious! I used real butter because I don't like the fake-ness of margarine. Thanks for sharing your recipe! It's definitely our family favorite now, too!
This recipe was so simple and I LOVED that I could chill it overnight and bake it in the morning. I made it for my Sunday School class and there was only one small piece left- which was good because I wanted to try it! I will definitely be making this again. I omitted the nuts and added some dark brown sugar to the topping and it was delicious!
