This is a super easy recipe for brunch. The only catch is that you can't open the oven during the baking time without collapsing the pancake. Also, this makes a single pretty *pancake*

Ingredients

  • 4 eggs
  • 1 1/2 cup flour
  • 1 1/2 cup milk
  • 1/2 t salt
  • 1/4 cup butter (1/2 stick)
  • 1 can pie filling (optional) OR
  • 3-4 T cinnamon/sugar mixture for sprinkling (optional)

Step 1

Preheat the oven to 425F. After you get all of your ingredients ready, toss the butter in a 9x13 inch pan (alternately you can use a cast iron skillet) and toss the pan in the oven for about 5 minutes. While the pan preheats, beat the eggs lightly. Add flour and salt to make a stiff dough. Slowly add the milk while stirring/mixing to make a thin batter. Remove the pan from the oven and swirl the butter around until if coats the bottom of the pan. Pour the batter into the pan and sprinkle with the cinnamon/sugar mixture (if desired) and place on the middle rack in the oven. Bake for 25 minutes -- DO NOT OPEN THE OVEN DOOR WHILE BAKING. Serve immediately with syrup or pie filling.
