Ingredients

  • 20 Medium tomatoes
  • 4 medium onions
  • 4 Garlic cloves
  • 3 bay leaves
  • 4 tsp Salt
  • 2 tsp dried oregano
  • 1 1/4 tsp Pepper
  • 1/2 tsp dried basil
  • 12 oz Tomato paste
  • 1/3 Cup Packaged Brown Sugar

Preparation

Step 1

1. Boil a pot of hot water and place tomatoes in for 30 seconds. Remove and place in pot of cold water, skins will peel off easily, then core and chop. (or use food processor)
2. Sauté onions in canola oil.
3. Add tomatoes, and minced garlic cloves, bay leaves, salt, pepper, oregano, and basil. Bring to boil. Reduce heat, simmer for 2 hours, stirring occasionally.
4. Add tomatoe paste, brown sugar, simmer uncovered for 1 hour. Discard bay leaves. Freeze or serve.
