Coffee marshmallows
A great variation of a marshmallow to serve during the holidays. Can dip in chocolate, serve in hot chocolate, chopped and added to fudge, etc.

Ingredients
- 3 envelopes of Knox gelatin
- 3/4 cup of strong cold coffee, divided
- 2 cups granulated sugar
- 2/3 cups corn syrup
- 1/4 teaspoon salt
- 1 tablespoon vanilla extract
- Powdered sugar (for dredging)
- Cooking spray or oil (for pan and spatula)

Preparation
Step 1
1. Pour 1/2 cup of coffee in mixing bowl. Sprinkle with gelatin and let sit 10 minutes.
2. Combine granulated sugar, corn syrup and 1/4 cup coffee in a saucepan. Bring to a boil and boil hard for 1 minute.
3. Add boiling liquid to the gelatin mixture. Mix at high speed and add salt. Beat for 12 minutes. Add vanilla and incorporate into mixture. You should have a very gooey marshmallow creme at this point.
4. Spray pan and spatula with oil. Spread into 9x13 pan. Cover and let sit for 4 hours.
