Ingredients
- 1 Tbsp. olive oil
- 1/2 cup minced celery
- 2 garlic cloves, minced
- 3/4 cup finely chopped onion
- 1 tea. salt
- 1/2 tea. turmeric
- 1/4 tea. paprika
- 1 dried red chile, crumbled (about 1/4 oz)
- 6 cups (1 1/2") peeled and cubed sweet potatoes (about 2 lb)
- 1/2 cup water
- 1 Tbsp. chopped fresh cilantro

Preparation
Step 1
Heat oil in a Dutch oven over medium heat. Add celery and garlic; cook 1 minute, stirring constantly. Add onion and next 4 ingredients; cook 10 minutes, stirring frequently. Add potatoes and water, bring to a boil. Cover, reduce heat, and simmer 35 minutes or until potatoes are tender.
Sprinkle with cilantro.
