Ingredients
- 21-25 size shrimp (shelled, deveined and tail removed)
- Boursin cheese
- Proscuitto
- Olive oil

Preparation
Step 1
Cut a slit in back of each shrimp and stuff a small amount of Boursin in the slit. Wrap with a piece of proscuitto and place on a plate (can be frozen at this point).
If frozen, thaw in refrigerator, then drizzle with extra virgin olive oil and microwave for 2 minutes. Let stand for 5 minutes, then serve.
