Glazed Sweet Potatoes and Apples

This is the recipe our family uses for our Thankgiving sweet potatoes. Who needs marshmallows when you have the goodness of the tart apples along with the sweet, orange glaze.

This dish can be made ahead of time through step 5. Freeze or refrigerate dish and reserved glaze until ready to use.

Ingredients

  • 6 medium-sized sweet potatoes (about 3 1/2 lb.)
  • 1 teaspoon salt
  • Water
  • 3/4 cup butter or margarine
  • 1 cup packed, light or dark brown sugar
  • 1 1/2 cups orange juice
  • 2 tablespoons coarsely grated orange peel
  • 1/4 teaspoon salt
  • 2 large tart cooking apples (i.e. Granny Smith), peeled, cored, and sliced 1/4 inch thick

Step 1

1. Scrub potatoes under cold running water. Place in a large saucepot and add 1 teaspoon salt and water to cover. Bring water to a boil over high heat; reduce heat to low; cover and simmer for 25 minutes or until potatoes are tender.

2. Using a slotted spoon, remove potatoes from boiling water and let drain. When cool enough to handle, use a small knife to peel potatoes. Cut potatoes crosswise into 1/2 inch thick slices; set aside. Preheat oven to 400F.

3. In a medium-sized skillet, melt butter over moderately high heat. Add brown sugar, orange juice, orange peel, and 1/4 teaspoon salt. Bring mixture to a boil, stirring constantly, until sugar is completely dissolved. Simmer, uncovered, for 10 minutes, until syrup is thick.

4. Add apple slices to orange sauce; simmer, uncovered, stirring occasionally to turn apple slices in sauce, for 5 minutes or until apples are just tender. Using a slotted spoon, remove apple slices from sauce and set aside.

5. In a 2-quart shallow baking dish, alternately arrange sweet potato and apple slices in rows. Spoon half of the orange syrup evenly over the sweet potatoes and apples; reserve remaining syrup.

6. Cover and bake for 25 minutes. Remove cover; baste apples and sweet potatoes with remaining orange syrup. Return to oven and bake, uncovered, for 15 to 20 minutes or until apples and potatoes are glazed and very tender.
