Celery with Carlow and Walnuts

Carlow cheese is made in County Carlow. It is a mild, semi-firm, raw cow's milk cheese.
Make filling up to two days in advance. Cover and refrigerate.

Ingredients
- 8 large celery stalks
- 1 c. crumbled Carlow cheese
- 1/2 c. cream cheese
- Salt and black pepper
- 1 tsp. paprika to dust
- 20 walnut pieces to garnish

Preparation
Step 1
Cut celery stalks on diagonal to make 20 (2" x 2") diamond-shaped pieces. Beat Carlow and cream cheese until well combined. Add salt and pepper to taste. Fill piping bag with cheese mixture and pipe into celery. Dust with paprika and garnish with walnuts.
