This is the best chow recipe and have made it yearly for the last 30 years
The secret is to let it simmer for up to six hours. The chow will be dark when cooked.

Ingredients

  • 4 qts sliced green tomatoes
  • 2 qts sliced onions
  • 2 red or green peppers
  • 1/2 cup coarse salt
  • 3 cups brown sugar
  • 2 cups white sugar
  • 1 heaping tsp celery seed
  • 1 tsp mustard seed
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1 1/2 tsp cinnamon

Step 1

Slice the tomatoes with the half-cup of salt and let stand over night. In morning, drain well and add onions and peppers and the rest of,ingredients. Boil well and bottle in sterilized jars.
