MEXICAN-STYLE BEEF AND RICE ON TORTILLA CHIPS

A childhood favorite of mine. I typically make a triple-recipe, and liberally modify the spicing for my taste. It freezes well.

Ingredients
- 1 lb. lean ground beef
- 1 med. onion chopped
- 1 clove garlic
- 2 c. water
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 2 tbsp. brown sugar
- 1 tbsp. chili powder
- 1 tsp. oregano
- 1 tsp. cumin seed
- 1 tsp. salt
- 1 c. cooked rice or quinoa
- 1 bunch spinach (optional)
- Tortilla chips

Preparation
Step 1
1. Heat oil over medium heat in large skillet or heavy-bottomed pot.
2. Add in cumin seed and heat for a couple minutes stirring frequently.
3. Add in onions and heat for about 5 minutes stirring frequently.
4. Stir in remaining spices and cook for ~30 seconds.
5. Add in the beef to brown.
6. Add 1 1/2 cup water, tomato sauce and paste, and sugar.
7. Cover and simmer ~40 minutes, stirring every few minutes.
8. Stir in the cooked rice. (stir in spinach now if you'd like)
9. Serve topped with salsa, cheese and sour cream and scoop with tortilla chips.
