Ingredients

1 1/2 LBS tomatoes - cut into large cubes
1 sm. onion - finely chopped (abt 1 C)
1/2 C chopped parsley
3 gloves garlic, chopped
2 TBL EVOO
4 boneless, skinless chicken breasts (6 oz each)
1 C grated fontina

Preparation

Step 1

preheat broiler
9X13 baking dish - toss tomatoes, onion, 1/4 C parsley, garlic & EVOO
season
place chicken on top of tomatoes
season
broil 8 min, turn chicken & broil again until sauce bubbles, abt. 6 min.
sprinkle w/ cheese
broil 1 min
garnish w/ remaining parsley
