WATERMELON SALAD

Ingredients
- 1/2 medium-size watermelon, chilled, cut into cubes to make 8 cups
- 1/4 cup fresh mint leaves, finely chopped
- 4 tsp chives, finely chopped
- 1/2 cup feta, crumbled
- 2 tbsp glazed balsamic vinegar
- Cracked pepper to taste

Preparation
Step 1
Place 2 cups of watermelon on each plate. Sprinkle each with 1 tbsp mint, 1 heaping tsp chives and 2 tbsp feta.
Drizzle with about 2 tsp balsamic glaze, sprinkle with cracked pepper and serve.
