Ingredients
- 1 small shallot, minced
- 3 Tbsp fresh lime juice
- 2 tsp honey
- 1 tsp grated lime zest
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 English cucumber, diced
- 1 avocado, peeled, pitted and diced

Step 1
Whist together shallot, lime juice, honey, lime zest, oil, salt and ground pepper in a small bowl.
Combine beans, bell pepper and cucumber in a large bowl. Add dressing; mix well. Add avocado; gently toss to blend.
