Ingredients
- 2 c cooked Riceland rice
- 2 c (8 oz) shredded Monterrey Jack cheese
- 1-1/2 c cooked, chopped chicken breast
- 1 can (12 fl oz) evaporated milk
- 1/2 c finely chopped red onion
- 2 large eggs, lightly beaten
- 1/4 c chopped fresh cilantro
- 2 Tbsp butter or margarine, melted
- 1 Tbsp diced jalapeños, (optional)

Preparation
Step 1
Preheat oven to 350°. Grease a 2 qt casserole dish.
Combine all ingredients well in a dish.
Bake 45-50 minutes or until knife inserted in center comes out clean.
