Ingredients
- 1 medium onion, sliced
- 2 pounds zucchini, sliced
- 1/2 cup Vegetable Oil Spread, melted and divided
- 2 cups shredded mozzarella cheese (8 ounces)
- 1/2 cup plain dry bread crumbs
- 1/4 cup grated Parmesan cheese

Step 1
In lightly greased 2-quart oblong baking dish, layer onion and zucchini slices; drizzle with 1/4 cup melted spread. Sprinkle with mozzarella cheese. Combine remaining spread, bread crumbs and Parmesan cheese. Sprinkle crumb mixture evenly over top. Bake at 350 °F 35 to 40 minutes or until zucchini is fork tender.
