Lemon Squares w/Nilla Wafers

Ingredients
- Crust:
- 20 Reduced Fat Nilla Wafers, finely crushed
- 1/2 ½ C flour
- 1/4 ¼ C. brown sugar
- 1/4 ¼ C. cold margarine
- Combine wafer, flour, brown sugar and cut in cold margarine until it resembles coarse crumbles. Press firmly in bottom of 8 inch square pan lined with foil (extend foil over sides of pan). Bake 15 minutes.
- Beat:
- 8 oz cream cheese
- 1 C. sugar
- Add in 2 eggs and 2 Tbl. four, beat well.
- Blend in:
- 1 Tbl. lemon peel
- 1/4 ¼ C. fresh lemon juice
- 1/4 ¼ tsp. baking powder
- Pour over crust.

Step 1
Bake 25 to 28 minutes or until center is set. Cool completely. Cover and refrigerate at least 2 hours or overnight. Sprinkle with powdered sugar and grated lemon peel if desired just before serving. Store leftovers in frig.
