Ingredients
- 1/2 cup boiling water
- 2 cups rolled oats
- 1 tbsp unsalted butter
- 4 tsp NutraSweet or 4 packets of Equal
- 2 extra-large eggs
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt

Step 1
Preheat the oven to 375 F.
Pour boiling water over the oats, mix, cover, and set aside to soak. Meanwhile, beat the butter, NutraSweet, eggs, and vanilla together until fluffy and smooth. Add the baking powder and salt to the oats, then pour the oats into the creamed mixture and combine well.
Drop teaspoonsful 2 to 3 inches apart on a lightly greased cookie sheet. Bake for 12 to 15 minutes. Cool completely on a rack. Store in an airtight container in layers separated with wax paper or paper towels.
