Ingredients
- 1 cup shredded swiss cheese
- 1 9-inch baked pie shell (deep dish)
- 1/2 lb. Italian sausage, casings removed, cut into 1/2 inch pieces (or bulk hot Italian sausage)
- 1/2 lb. asparagus trimmed to 5 inches then sliced diagonally
- 1/4 cup finely chopped onion
- 4 eggs, slightly beaten
- 1-1/2 cups milk or light cream (or half and half)
- 2 tbsp. fresh minced parsley
- 1.4 tsp. salt

Step 1
Preheat oven to 325 degrees
Sprinkle ½ cup cheese in bottom of pie shell. Brown sausage in skillet; drain and discard fat. Remove sausage from pan and set aside.
Saute asparagus in skillet over low to medium heat until tender. Add onion and sauté 2 minutes longer. Return sausage to skillet. Stir while cooking for 2 minutes more. Spoon into pie shell.
Combine eggs, milk, parsley, and salt. Pour into shell. Sprinkle with remaining ½ cup cheese. Bake for 45-50 minutes.
