Ingredients

  • Marinade:
  • 2 onions cut into quarters
  • 2 cups olive oil
  • Salt
  • Pepper
  • 1/4 ts saffron
  • Zest from 1-2 lemons (use only zest. lemon juice in marinade will start to cook chicken and make it dry)
  • 6 Chicken Breasts (With bone is preferable, otherwise us thick boneless, skinless breasts)

Preparation

Step 1

Puree all marinade ingredients in food processor or blender


Arrange chicken (bone in pieces will be juiciest) in one layer in dish and cover with marinade. The longer you let it marinade, the better, My aunt did it for 3 days one time and it was amazing.


Grill or roast in oven until done.


Squeeze lemon over at the end.


Serve with basmati rice, plain yogurt wth cucumbers (tzattziki sauce can substitute)
