Ingredients
- Crust:
- 1 1/4 C. graham cracker crumbs
- 3 Tbs. sugar
- 1/4 C. butter
- Filling:
- 24 oz. cream cheese
- 3/4 C. sugar
- 5 tsp. cornstarch
- 4 eggs
- 1 egg yolk
- 1/4 C. light rum
- 1/2 C. frozen limeade concentrate
- 3 Tbs. lime juice
- Topping:
- 1/2 C. frozen limeade concentrate
- 4 tsp. cornstarch
- 4 tsp. sugar
- 1 Tbs. light rum
- 2 tsp. lime juice
- 1 tsp. shredded lime peel

Preparation
Step 1
In a small bowl stir together crumbs and sugar. Add melted butter. Stir, press into 9" springform pan.
In a large bowl combine cream cheese, sugar, and cornstarch. Beat till smooth. Add eggs and egg yolk. Beat in rum, limeade concentrate, and lime juice. Pour over crust. Bake at 350* for 15 min. Lower temperature to 200* and bake for 1 hour and 10 min. Run knife around edge of cake.
In a small saucepan stir together limeade concentrate, cornstarch, sugar, rum, and lime juice. Cook and stir till thickened and bubbly. Cook and stir 2 min. more. Remove from heat. Stir in lime peel. Pour over cheesecake.
