  • 5 medium potatoes peeled
  • 2-1/2 tablespoons butter or margarine
  • 1/4 cup chopped onion
  • 1-1/2 teaspoons minced garlic
  • 8 oz. ground beef
  • 1 package (1o oz.) frozen spinach thawed and squeezed dry
  • 1/2 cup cottage cheese
  • 4 oz. Swiss cheese shredded (1 cup)
  • 1 large egg
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Step 1

Place oven rack in upper third position, heat oven to 350 degrees. Grease an 8" square baking pan

Put potatoes in saucepan with cold water to cover. Bring to a boil and cook until almost done 20-25 minutes. Drain, cool about 10 minutes.

Meanwhile melt butter in a medium nonstick skillet. Spoon 2 tablespoons into a cup, leave rest in skillet. Slice potatoes into 1/4" thick rounds. Arrange half overlapping in prepared 8" square dish. Drizzle with half of the butter. Add onions and garlic to skillet. Cook stirring often until onions are translucent. Add ground beef and cook, breaking up chunks, 3-4 minutes until no longer pink. Drain off any fat. Cook in skillet 10 minutes. Add spinach, cottage cheese, 1/4 cup Swiss cheese, egg, salt and pepper, stir to mix well. Spread mixture over potatoes in pan. Cover with remaining potatoes, drizzle with remaining butter and sprinkle with remaining cheese. Bake 40 minutes or until hot. Let stand 5 minutes before serving.
