Mexican Shrimp Cocktail

Ingredients
- 1 generous pound peeled small shrimp
- 1/2 medium onion, chopped
- 1 lime
- 1/3 cup chopped fresh cilantro, plus several sprigs for garnish
- 1/2 cup chili sauce
- 1-2 Tbsp hot sauce
- 1-2 Tbsp Belberry Sweet Tomato Vinegar
- 1 cup peeled, diced cucumber
- 1 small ripe avocado, peeled, pitted and diced
- Salt and pepper
- Several lime slices, for garnish

Preparation
Step 1
Either buy boiled shrimp (not too big) or boil it yourself. After straining off the liquid and peeling, put in a container, sprinkle with fresh lime juice, cover and refrigerate.
In a bowl, mix onion, chili sauce, lime juice, hot sauce, vinegar, cilantro. Stir, taste and adjust seasonings if needed. Add cucumber and shrimp and stir. Chill in refrigerator for an hour.
To serve, place avocado pieces in a wide-mouth glass or bowl. Squeeze lime juice over avocado and sprinkle salt and pepper on top. Spoon shrimp mixture over avocado.
Garnish with cilantro and lime wedges.
