Ingredients

  • 3 3 3 2 1 1/2 1 cups flour - 2 cu spelt flour, 1 cu almond flour 1/2 cu. arrowroot flour 1 cu. Truvia
  • 3/4 3/4 3/4 cu coconut oil
  • 1 1 3 whole egg, 3 egg whites
  • 1 1 1 tsp baking powder
  • 1 1 1 tsp baking soda
  • 2 2 2 tsp vanilla
  • 1 1 1 tsp cinnamon
  • I tsp Pampered Chef Cinnamon plus or All spice
  • Almond milk if needed

Preparation

Step 1

Preheat oven to 350.

Grease bottom of 2 loaf pans (or 8x8)

Mix zucchini, sugar, oil, vanilla and eggs.

Stir dry ingredients together and add to wet ingredients.

Pour into pans.

Bake 35-42 minutes or until golden brown.

Cool 10 minutes.

Cool completely before slicing.

Enjoy!

Please note: I use truvia because it’s easier for baking. You could add extra cinnamon or allspice. And I’m sure coconut flour could be used as well.
