TWO HEART BEET SALAD

WALNUTS: full of omega-3 fats, which may lower cholesterol
HEARTS OF PALM: high in fibre, which protects against heart disease
BEETS: contain betacyanin, a potent antioxidant
OLIVE OIL: contains hearthealthy monounsaturated fat, which lowers ("bad") cholesterol
BABY SPINACH LEAVES: rich in beta-carotene, an antioxidant

Ingredients
- 2 Beets
- 1 package baby spinach
- 1 tbsp Olive oil
- 1 tsp white wine vinegar
- 1/4 cup toasted walnuts
- chives for garnish

Preparation
Step 1
Lightly coat 2 beets with vegetable oil.
Wrap in foil; roast in 375°F (190°C) oven until fork-tender, about 1 hour.
Let cool.
Peel; cut into 1/4-inch (5 mm) thick slices.
Using cookie cutter, cut out hearts.
Cut drained rinsed canned hearts of palm into 1/4-inch (5 mm) thick slices.
Line 2 plates with baby spinach; arrange beets and hearts of palm over top.
Drizzle each salad with 1 tbsp (15 mL) Olive oil and 1 tsp (5 mL) white wine vinegar.
Sprinkle with salt and pepper; garnish with snipped chives and walnut halves.
