Ingredients

  • 2 lbs. ground chicken (preferably thigh meat)
  • 1 stalk celery, minced
  • 1 tbsp red wine vinegar
  • 1 tbsp chile flakes
  • 1/2 cup Frank's Red Hot Sauce
  • 1 cup breadcrumbs
  • 3 eggs

Preparation

Step 1

1. Melt 1 tbsp of the butter in a small saucepan over a low flame. Four in the Frank's Red Hot sauce, stirring constantly until completely mixed. Remove from the flame and reserve t room temperature.

2. In a a large mixing bowl combine all of the ingredients (salt to taste approximately 1 tsp.; including the jot sauce/butter mixture) and stir vigorously until completely uniform.

3. Roll the mix into tight, golf-ball sized meatballs and place on a lightly oiled pan. roast in a preheated 450 oven for 6 minutes. rotate and continue baking 8 minutes.
