Ingredients
- 1 lb. bay scallops
- 3 tbs butter, divided
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 tsp paprika
- 1 clove garlic, minced
- 1 tbs parsley, minced
- 3 tbs fresh lemon juice

Preparation
Step 1
Melt two tablespoons of butter in a pan, adding the garlic, salt, paprika, and pepper.
Sauté the scallops over medium-high heat until they just start to pick up some color (about four minutes), stirring them so they don't overcook.
Keep them warm on a heated plate, while adding the parsley, lemon juice and the final pat of butter to the pan, mixing until it is heated through, to use as a sauce.
The recipe calls for serving the scallops on top of a bed of plain rice and tiny peas
