  • 10 apples (use a mixture - granny smith and a red variety)
  • 1 orange
  • 2 cinnamon sticks
  • 1 cup brown sugar
  • 2 tsp cloves
  • 1 tsp cardomom (optional)
  • Water

Preparation

Step 1

Quarter the apples and oranges and place them in the inner pot of the pressure cooker. Add the spices and cover with water.

Place the inner pot in the pressure cooker. Place the lid on the cooker and time it on high pressure for 10 minutes.

Quick release the pressure. Mash up the fruit a little.

Place the lid on again and cook on high pressure for 5 minutes. At this point you can use the natural pressure release (where you let the pot release pressure on it's own) or you can do a quick release.

Strain the mixture through a fine mesh sieve into a bowl to cool, if you are not using immediately. Otherwise you can pour the cider back into the pressure cooker and keep it on the warm setting to use warm.

Serve with a cinnamon stick and sliced apples or oranges. Or add a little to your glass of champagne. It's really good.
