Ingredients
- 1 lb ground Italian sausage
- 1/2 yellow onion (chopped)
- 1/2 red bell pepper (chopped)
- 1/2 tsp salt
- 3/4 tsp black pepper
- 3/4 cup uncooked medium-grain white rice
- 1 cup water
- 14.5 oz can diced tomatoes (drained)
- 1/2 tsp dried basil
- 2 10.75 oz cans tomato soup (condensed)
- 1 cup mozzarella cheese (divided)

Preparation
Step 1
Preheat oven to 375°
In a small skillet, cook sausage, onions, and red pepper over medium heat until sausage is no longer pink. Drain. Sprinkle with salt and pepper.
Mix soups and basil. Spray 2-quart baking dish with cooking spray.
Place rice and water in baking dish, stir to mix. Add tomatoes to meat, stir well. Add to rice. Pour soup and basil evenly over the top. Tear a piece of foil big enough to cover the dish.
Bake 40 minutes. Remove foil and sprinkle cheese over top. Bake additional 10-15 minutes.
