Zucchini-Apple Slaw

There's no cabbage in this slaw - just crisp zucchini and apples - but it's sure to become a summertime favorite.

Ingredients
- 1/2 cup mayonnaise
- 3 tbsp cider vinegar
- 1 tbsp sugar
- 1 tsp caraway seeds
- 4 cups coarsely shredded zucchini
- 1/4 cup thinly sliced green onions
- 2 to 3 medium-size red- or green-skinned tart apples
- Salt
- Pepper

Step 1
Combine mayonnaise, vinegar, sugar and caraway seeds; mix until well blended.
In a large bowl, combine zucchini and onions. Core apples, peel if desired, and cut into 1/2-inch chunks (you should have about 3 cups). Add apples to zucchini mixture; pour dressing over salad and mix lightly until well coated. Season with salt and pepper to taste. Cover and refrigerate for at least 2 hours or up to 4 hours. With a slotted spoon, transfer salad to a serving bowl.
