Danish Filbert Butter Cookies (Hasselnødssmakåger)

The hazelnut is the fruit of the cobnut bush, which grows all over Europe. It is a rich-tasting nut and is popular in Europe as well as in the Scandinavian countries. Filbert is another name for hazelnut, and it gets the name because the nut ripens about August 22nd, St. Philbert's Day.

Ingredients
- 2/3 cup butter, at room temperature
- 1/2 cup sugar
- 1 egg
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup hazelnuts, toasted and ground

Preparation
Step 1
In a mixing bowl, cream the butter and sugar until blended. Mix in the egg. Add the flour and baking powder and beat until fluffy. Add the hazelnuts. Chill the dough until firm enough to shape, about 30 minutes.
Cover baking sheets with parchment paper. Preheat the oven to 400°F.
Shape into balls about the size of small walnuts. Press the tops of the cookies with a fork, making a crisscross pattern. Bake for 7 to 8 minutes until lightly browned.
