Red Velvet Cupcakes

Ingredients
- 1 box (181/4 oz.) chocolate cake mix
- 1 bottle (1 oz.) red food coloring
- 2 packages (3 oz. each) cream cheese, softened
- 1 white chocolate baking bar (4 oz.), melted and cooled slightly
- 1 tsp. vanilla extract
- 2 1/2 –3 cups confectioners’ sugar

Preheat oven to 350°F. Line 24 muffin cups with paper liners.
Prepare the cake mix according to package directions, using 1/4 cup less water than indicated including the redfood coloring.
Fill the muffin cups about2/3 full. Bake until a toothpick inserted in the center of a cupcake comes out clean, 18–25 minutes. Cool the cupcakes in the pan for 10 minutes, then transfer to wire racks to cool completely.
Place the cream cheese, white chocolate and vanilla in a medium bowl. Beat with an electric mixer set on medium speed until fluffy, 1–2 minutes. Gradually beat in the confectioners’ sugar until frosting is a spreadable consistency.
Spread about 1 tbsp. frosting on each cupcake with a flat spatula. Serve or store loosely covered.
