    cups chicken broth

    tbsp chopped cilantro fresh

    cup frozen corn kernals

    soft corn tortilas

Directions

Toss the cubed chicken breast in flour that has been generously seasoned with salt and pepper, until pieces are lightly coated With the lid off , heat oil on high or brown till sizzling Place the coated chicken in cooker and saute until lightly browned, about 5 minutes Add the onion, carrots, bell pepper, and jalapeno pepper and stir well, sauteing 1 additional minute Add the chicken stock, cilantro, cumin, salt and pepper to the chicken mixture. lock the lid of pressure cooker, set on high and cook for 7 minutes Perform quick release to release cookers pressure. Stir in the corn kernals and tortilla strips before serving
