Quick Jambalaya

Here's a simple recipe for jambalaya, suggested by my cousin, Rachel.

Ingredients
- 1 tbsp olive oil
- 1/2 lb hot Italian sausage links, sliced and quartered
- 1 onion, chopped
- 1 14oz can diced tomatoes, undrained
- 1 14oz can/box reduced sodium chicken broth
- 1 green pepper chopped
- 1/2 cup of your preferred barbecue sauce
- 1 lb frozen cooked shrimp, thawed (this is optional, sub chicken if you do not like shrimp)
- 2 cups instant white rice, uncooked

Step 1
1. Heat oil in large nonstick skillet on medium-high heat. Add sausage and onions and cook for 10 minutes or until sausage is no longer pink.
2. Add remaining ingredients; mix well and bring to a boil. Cover.
3. Remove from heat and let stand covered for 5 minutes. Stir gently before serving. Would be delicious with some cornbread!
