Ingredients

  • 8 oz bittersweet chocolate, chopped
  • 12 tbsp unsalted butter, cut into pieces
  • 2 tbsp rum or strong brewed coffee
  • 3 large eggs
  • 1/2 cup sugar
  • 1 tsp unsweetened cocoa powder for dusting the top
  • lightly whipped cream or softened ice cream for garnish

Step 1

Preheat oven to 350
1. Butter a 6 cup baking dish or 7 inch springform pan. Line the bottom of the dish or pan with foil or parchment paper and butter the paper.
2. Put the chocolate into a heatproof bowl or a double boiler. Add the butter. Place the bowl over a pan of simmering water; the water shouldn't touch the bowl. When the chocolate is softened and the butter melted, remove the bowl from the heat and stir until blended and smooth. Stir in the rum.
3. In a medium bowl, beat the eggs with the sugar until light and pale yellow, about 3 minutes. Stir the egg mixture into the chocolate.
4. Scrape the batter into the prepared pan and cook in the oven approximately 1 hour. The cake should look "set" and cracked.
5. Allow the cake to cool to room temperature, or overnight before dusting with cocoa powder and serving with a little cream or ice cream.
