Ingredients
- marinade
- 1/4 cup freshly squeezed lime juice
- 1/4 cup fish sauce
- 1/8 cup granulated sugar
- 1 tablespoon vegetable oil
- 1/2 tablespoon hot chili-garlic sauce
- 1 1/2 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon ground coriander (optional)
- KEBABS
- 1 1/2 lbs top sirloin beef
- 6 -8 skewers, presoaked in water
- 1 red bell peppers (optional)
- 1/2 to taste chopped fresh mint (optional) or 1/2 to taste cilantro leaf (optional)

Directions:
Prep Time: 6 hrs
Total Time: 6 1/4 hrs
1 Whisk together marinade ingredients and set aside.
2 Trim fat from beef and cut into bite sized chunks;.
3 Place beef and marinade in a plastic bag and refrigerate 4-6 hours or overnight.
4 When ready to cook, oil grill and heat barbecue to medium-high.
5 Cut peppers into squares.
6 Alternately thread beef and peppers onto skewers, and save marinade.
7 Place skewers on grill. Grill with lid closed, turning occasionally and brushing with marinade, for 5 minute Discard remaining marinade.
8 Continue grilling, uncovered, until meat is lightly charred and resists slightly when pressed, 4 to 8 more minute
9 Remove to a platter and sprinkle with mint.
10 Serve with lime wedges.
