Elaine's Crockpot Lasagna

Today I’m making that crock pot lasagna and I remembered that you wanted the recipe. It’s a compilation of two different recipes I found and we really love it. I tweaked it a bit to fit our likes. I used a 6 quart oval crock pot. I hope you like this but pasta sauce is a very personal thing the same way that Pizza is. We really like this and I love the notion of setting and forgetting!!

Ingredients
- Meat Sauce:
- 12 ounces uncooked lasagna noodles
- 1 pound of ground beef
- 1 onion chopped
- 3 large cloves of minced garlic it.
- Oregano, basil and parsley, to taste.
- 1/2 cup red port wine
- 1-6 oz. Can of Tomato Paste (Hunt's)
- 1-15 oz. Can of Tomato Sauce
- 1-15 oz. Can of diced tomatoes
- Filling:
- 8 oz. Ricotta Cheese
- 2 eggs beaten
- 2 cups mozzarella cheese
- 1/2 cup Parmesan or Asiago cheese
- Salt to taste
- Topping:
- 2 cups Mozzarella cheese

Step 1
Here goes:: Cook 1 pound of ground beef and drain fat. Add 1 chopped onion to beef mixture and allow to cook until transparent. Add 3 large cloves of minced garlic and stir till you can smell it. Add oregano, basil and parsley to your taste. Then add 1/2 cup red port wine (I use Taylor Port Wine) and allow to simmer on high until it’s almost completely evaporated. Add 1–6 oz. Can of Tomato Paste (Hunts) and allow to cook for a bit then add 1–15 oz. Can of Tomato Sauce and a 15 oz. Can of diced tomatoes. Cook until heated through.
Filling:
Mix Ricotta Cheese, eggs, 2 cups mozzarella cheese, Parmesan or Asiago cheese and salt. Stir together well.
Spray the interior of crock pot with Pam and then ladle some sauce on bottom. Using a total of 12 ounces of uncooked noodles lay two layers on bottom of crock atop the sauce breaking noodles to fit. Spread 1/4 of the cheese and then some more sauce. Repeat this procedure until using up the cheese mixture ending with noodles then cover with the rest of the sauce. Sprinkle two more cups of mozzarella cheese over the sauce, set on low and cook for 3 1/2 to 4 hours.
