Ingredients
- 3/4 cup quinoa – rinsed
- 2 cups vegetable stock
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 sticks celery, chopped
- 2 teaspoons crushed garlic
- 1 medium carrot, diced
- 1/2 small red capsicum, diced
- 1/2 cup mushrooms, chopped
- 1 small zucchini, diced

Preparation
Step 1
Place the vegetable stock and quinoa in the rice cooker.
While rice is cooking, heat oil in a large wok or pan and add onion and cook for 2 minutes, then add garlic and cook for an additional 2 minutes.
Add celery and carrot and sauté a few more minutes before adding the remaining vegetables. Cook until vegetables are cooked as desired.
Once quinoa has finished cooking, stir in vegetables and serve or chill.
